A Bit of Our History

In the dry season of 2018 at a family do over a few drinks, the subject of how a distillery was sorely needed in the Whitsundays arose!!  Being cautious folk with a few prior businesses under our belts, we took the necessary steps to see if it was possible.  You can now see we are truly up and running!

2018/19 wet season saw the perfection of the Gin recipe as we added local tropical fruits to our basic gin recipe during distillation.  Rhonda and Sophia, our Portuguese copper Alquitar stills with their reflux action make a delicious gin.  We also have Bill and Ben Portuguese copper Alembic Stills which were sent to us described as "Garden Ornaments!" Dad and Dave are our most recent Alembic additions, making it a family of 6 stills. 

In addition to our light and whiskey barrel aged rum and vodka, we have started distilling whiskey! Our first barrel full is currently aging and we can't wait to release this product when it is ready. 

We aim to stay a "boutique" distillery as we are very proud of the products we have made so far. We haven't produced anything that we don't like yet!

Producing in Paradise -   we are lucky to live in this wonderful tropical part of Australia.  We are a family owned and operated business and we support local businesses as much as possible.  We do this by using local ingredients and local businesses where available.
