Whiskey Barrel Aged Rum is fermented from local molasses then distilled in small batches. Matured in 50 litre recoopered second use Western Australian whiskey barrels. The result is a rum golden in colour with unique and complex flavours of Tokay, caramel and raisins. The lingering finish has notes of smokey oak. Aged using the Solera method making each batch more mature than the last. Very limited release of six dozen every six months.
